A gluten free dosa that is extra nutritious, rich in anti-oxidants and the taste is just as delicious as a regular dosa. Foxtail Millet is a great source of dietary fibre, protein and is low in fat good for a diabetic friendly diet.

  • Foxtail Millet Flour- 3 cups
  • Red Rice Flour – 1 cup
  • Sago (Sabudana) – 1 cup
  • Optional: White Urad Dal (Split) – 1 cup
  • Sour Curd – as required
  • Spices as required: Mustard, Himalayan salt, Fenugreek Seeds, Methi seeds and Mormilagai (it’s a sundried chilli kept in butter milk)


  • Rinse and soak the foxtail millet and white urad dal for 6-7 hours in 2 separate bowls.
  • Steam cook sago and allow it to cool.
  • Grind urad dal and fenugreek seeds in a mixer grinder to make it to a smooth and fluffy batter.
  • Pour the ground batter to a large mixing bowl. Next grind the millet using just enough water to make a smooth batter.
  • Mix the flour, sour curd, and Himalayan salt.
  • Season with spices and let it ferment for 6 hours.
  • Once the batter is ready, you can make dosas out of it.
