This easy, budget-friendly Vegan Creamy Cucumber Salad is quick to make and will be loved by the whole family! Creamy Cucumber Salad is the perfect side to serve with burgers or other protein-rich main dishes.
- Prep time– 5 minutes
- Cooking time– 10 minutes
- Servings– 2 people
Ingredients-
- Red Onion- ⅔ cup
- Minced Garlic- 1 large clove
- Unsweetened Coconut Yogurt- 1 cup
- Sea salt- ½ tsp
- Black pepper- ½ tsp
- Lemon juice- 2 tbsp
- Apple Cider Vinegar- 1 ½ tbsp
- Maple Syrup- 1-2 tsp
- Thinly Sliced Medium Cucumber- 1cup
Procedure-
- In a medium mixing bowl, mix together all ingredients and seasoning except for the cucumber.
- In a bowl, whisk the dressing until it’s smooth.
- Then, add sliced cucumber and mix again until the cucumber is well coated with dressing.
