Ingredients-
- Foxtail Millet- 1 cup (cooked)
- Black chana- ½ cup
- Sweet potato- ¼ boiled and chopped
- Spinach- ½ cup
- Yellow capsicum- ½ cup, chopped
- Zucchini- ½ cup, choppedÂ
- Onion- 1 small, chopped
- Coriander- ¼ cup, chopped
- Chickpeas- ½ cupÂ
- Extra Virgin Olive Oil- 2 tbsp
- Chilli flakes- 2 tsp
- Lemon Juice- 2 tsp
- Black Pepper- as per taste
- Rock Salt- as per taste
Procedure-
- To cook Little Millet, first soak it in water.
- The ratio of little millet to water should be 1:1.5. Then, boil the soaked little millet until it is cooked through.
- In a pan, heat 2 tbsp of oil on medium heat.
- Start by chopping up your veggies into small pieces. Then, saute them in a pan until they’re cooked.Â
- Next, add the boiled chickpeas and black chana. Finally, add the chili flakes. Once the millet and vegetables are cooked, combine them in a large bowl and gently toss with pepper and salt to taste.
- Garnish with coriander.
