Healthy Mash-Up Soup is a veggie lover’s dream come true! Carrots, tomatoes, and beets come together to create a soup that is both warm and comforting. Plus, the addition of beets makes Healthy Mash-Up Soup extra delicious!
- Prep time– 10 minutes
- Cooking time– 20 minutes
- Servings- 2-3 people
Ingredients-
- Beetroot Peeled and Sliced- 1 big
- Diced Tomatoes- 6 Medium-Sized
- Carrot Peeled and Sliced- 2 Large
- Garlic- 2 Cloves
- Himalayan Salt- as per taste
- Ghee- 1 tbsp
- Water- 2 cups/ 500 ml
- Black Pepper- as per taste
- Roasted Cumin- as per taste
- Chilli Flakes- as per taste
For garnish-
- Dried oregano- as per taste
- Chopped raw spring onion- as per taste
Procedure-
- Add beets, tomato, carrots, garlic and salt to the pressure cooker. Add water and let it pressure cook for 4-5 whistles.
- Let the veggies cool.
- Use a blender to puree the cooked veggies until smooth, then strain the mixture through a metal sieve.
- In a pan, melt a spoonful of ghee. Add black pepper and cumin powder. Stir until combined.
- After you’ve strained the soup, let it boil until it becomes thick. If you need to, add more salt and pepper to taste.
- This soup is best served hot, with some spring onion and dried oregano for added flavour.
